Tongue Taco



Beef tongue tacos... cuz fuck it.

"Tongue meat is rich in calories and fatty acids, as well as zinc, iron, choline, and vitamin B12." Sure. My local soupy market carries beef tongue so I thought "fuck it!". Tacos de lengua it is.



Beef tongue
a big container to place the beef tongue and brining liquid in
enough water to keep all the beef tongue submerged
tablespoon of salt
tablespoon of sugar
a rosemary twig
4 or 5 cloves of garlic
onion
parsley
lard, butter or oil of your choice for frying
tortillas (in this case, a hipster grade oat flour pizza pizza was used)

Place the beef tongue in a container big enough for all the beef tongue to be submerged under water mixed with a tablespoon of salt and a tablespoon of sugar. Leave it in the fridge in the liquid for a day.
The next day, boil it for 3 hours in half of the brine it has been soaking in and half fresh water. 
After 3 hours or so, the tongue will be soft enough to poke a fork through it. Cut the tongue into itty bitty pieces. You can remove the skin off the tongue, or not. I chose not to. Fry it initially at high heat with a little bit of lard, or butter, or whatever you like. Bring it down to medium heat and stir, stir, stir until all the chopped pieces turn brown.
Eat it like that or get fancy and scoop the meat into a tortilla, add chopped parsley and chopped onion and squeeze a lemon on top just to be extra fancy.
